Petimezi is a delicious sweet and unique reduction of grapes that makes a great marinade for meats (lamb and beef). In Turkey they add water and drink it like squash. Also you can replace sugar with petimezi, use one teaspoon in your tomato sauce to reduce acidity. It’s a lovely combination with tahini or yoghurt.


1 garlic clove, crushed to a paste with salt
¼ tsp ground cinnamon
2 tbsp petimezi, grape molasses
1 tbsp red vinegar
4 tbsp extra virgin olive oil
Sea salt to taste


Mix garlic with cinnamon and petimezi, then add vinegar and whisk in oil. The sauce should emulsify. Check for seasoning!
